Gluten Conformation at Different Temperatures and Additive Treatments
The effect of temperature (25, 45, and 65 °C) on the gluten secondary structure was investigated by using Fourier transform infrared (FTIR) spectroscopy and modulation of disulfide and hydrogen bonds contributions (100 ppm ascorbic acid (AA), 0.6% diacetyl tartaric acid ester of monoglycerides (DATEM), and 0.25 mM dithiothreitol (DTT)). The results showed that additives heated at 65 °C altered most of the gluten matrix formation by changing structural secondary structures compared to the secondary structures of native gluten (control). The content of random coils, α-helices, and β-sheet of gluten increased, while the extent of β-turns and antiparallel β-sheets decreased, which led to the transformation to a more stable secondary conformation. In addition, the rheological properties (%creep strain) revealed that gluten deformation increased during the heating process with all of the additives. The chemometric method could quantitate an overall alteration of gluten polymerization and gluten matrix formation during heating with additive treatments.

Multiracial Microaggression Taxonomy
Substantial scholarship elucidates the prevalence of racial microaggressions in everyday interactions. Racial microaggressions are defined as “brief and commonplace daily verbal, behavioral, or environmental indignities, whether intentional or unintentional, that communicate hostile, derogatory, or negative racial slights and insults toward people of color” . Other scholars highlight how racial microaggressions interact with identity characteristics beyond race. For example, they can be “layered assaults, based on race and its intersections with gender, class, sexuality, language, immigration status, phenotype, accent or surname” . Furthermore, microaggressions are chronic stressors that affect the holistic health of people of color with the potential to trigger the development of psychological and physiological health issues. The literature available on multiracial microaggressions and examines how Black-Asian groups in particular are impacted in detail.

Addax (Genus)
The addax (Addax nasomaculatus), also known as the white antelope and the screwhorn antelope, is an antelope native to the Sahara Desert. The only member of the genus Addax, it was first described scientifically by Henri de Blainville in 1816. As suggested by its alternative name, the pale antelope has long, twisted horns - typically 55 to 80 cm (22 to 31 in) in females and 70 to 85 cm (28 to 33 in) in males. Males stand from 105 to 115 cm (41 to 45 in) at the shoulder, with females at 95 to 110 cm (37 to 43 in). They are sexually dimorphic, as the females are smaller than the males. The colour of the coat depends on the season - in the winter, it is greyish-brown with white hindquarters and legs, and long, brown hair on the head, neck, and shoulders; in the summer, the coat turns almost completely white or sandy blonde. The addax mainly eats grasses and leaves of any available shrubs, leguminous herbs and bushes. They are well-adapted to exist in their desert habitat, as they can live without water for long periods of time. Addax form herds of five to 20 members, consisting of both males and females. They are led by the oldest female. Due to its slow movements, the addax is an easy target for its predators: humans, lions, leopards, cheetahs and African wild dogs. Breeding season is at its peak during winter and early spring. The natural habitat of the addax are arid regions, semideserts and sandy and stony deserts. The addax is a critically endangered species of antelope, as classified by the IUCN. Although extremely rare in its native habitat due to unregulated hunting, it is quite common in captivity. The addax was once abundant in North Africa; however it is currently only native to Chad, Mauritania, and Niger. It is extirpated from Algeria, Egypt, Libya, Sudan, and Western Sahara, but has been reintroduced into Morocco and Tunisia.

The Microbiome in Obesity
Obesity has become a global epidemic and a public health crisis in the Western World, experiencing a threefold increase in prevalence since 1975. High-caloric diets and sedentary lifestyles have been identified as significant contributors to this widespread issue, although the role of genetic, social, and environmental factors in obesity’s pathogenesis remain incompletely understood. In recent years, much attention has been drawn to the contribution of the gut microbiota in the development of obesity, driven by a body of evidence supporting its central role in regulation of host physiology. Indeed, research has shown that in contrast to their healthier counterparts the microbiomes of obese individuals are structurally and functionally distinct, strongly suggesting gut dysbiosis as a key factor underpinning an obese phenotype. The following entry  explores the myriad of mechanisms by which the microbiome may contribute to the etiology of obesity, including modulation of host energy balance, immune function and macronutrient metabolism.

Neuroendocrine lung tumors comprise a range of malignancies that extend from benign tumorlets to the most prevalent and aggressive Small Cell Lung Carcinoma (SCLC). They also include low-grade Typical Carcinoids (TC), intermediate-grade Atypical Carcinoids (AC) and high-grade Large Cell Neuroendocrine Carcinoma (LCNEC). Optimal treatment options have not been adequately established: surgical resection when possible is the choice for AC and TC, and for SCLC chemotherapy and very recently, immune checkpoint inhibitors.Some mouse models have been generated based on the molecular alterations identified in genomic analyses of human tumors. With the exception of SCLC, there is a limited availability of (preclinical) models making their development an unmet need for the understanding of the molecular mechanisms underlying these diseases.

Pancreatic Cancer Organ-Chip Models
Pancreatic Ductal Adenocarcinoma (PDAC) is an expeditiously fatal malignancy with a five-year survival rate of 6–8%. Conventional chemotherapeutics fail in many cases due to inadequate primary response and rapidly developing resistance. This treatment failure is particularly challenging in pancreatic cancer because of the high molecular heterogeneity across tumors. Additionally, a rich fibro-inflammatory component within the tumor microenvironment (TME) limits the delivery and effectiveness of anticancer drugs, further contributing to the lack of response or developing resistance to conventional approaches in this cancer. Patient-derived three-dimensional (3D) organoid technology has provided a unique opportunity to study patient-specific cancerous epithelium. Patient-derived organoids cultured with the TME components can more accurately reflect the in vivo tumor environment. A number of in vitro models have been developed to address the limitation of the lack of tumor extracellular matrix (ECM) in the conventional models of cancer and drug screening platforms. In this regard, microfluidic chips are cutting-edge devices that process fluids in micro-sized channels and allow the culture of multiple cell types within a matrix—so-called ‘organ-on-a-chip (OOC)’ technology. OOC allows us to recapitulate 3D multicellular architecture and microengineering of TME with the potential to bridge the gaps between bench and bedside by providing screening platforms for testing anticancer agents before reaching human clinical trials.
