The use of microorganisms in Mexico began before the Spanish conquest. Grains and fruit were fermented for thousands of years around the world, and Mexico was no exception. Many beverages are still prepared nowadays using an assortment of different microorganisms. These beverages use several yeasts, including Saccharomyces and non-Saccharomyces species. Although not conclusive, it has been suggested (and strong evidence points towards it) that pre-Hispanic cultures not only fermented beverages, but also distilled them.

This entry explains why the 'hydrogen economy' has been so slow in coming, despite the abundance of hydrogen (H2) on Earth. H2 is either bound up with oxygen in water, or with carbon in fossil fuels, which release CO2 on combustion. For several decades, hydrogen-powered vehicles using fuel cells were seen as the major opportunity for H2. But if H2 is produced from fossil fuels, its use makes little contribution to climate change mitigation, and in any case, electric vehicles are now the main challengers to oil for powering transport. H2 will only come into its own when intermittent renewable energy, mainly wind and solar energy, dominate energy supply, as it makes sense to convert surplus power to H2 for storage or immediate use.

From CO2 to Value-Added Products
The global warming and the dangerous climate change arising from the massive emission of CO2 from the burning of fossil fuels have motivated the search for alternative clean and sustainable energy sources. However, the industrial development and population necessities make the decoupling of economic growth from fossil fuels unimaginable and, consequently, the capture and conversion of CO2 to fuels seems to be, nowadays, one of the most promising and attractive solutions in a world with high energy demand. In this respect, the electrochemical CO2 conversion using renewable electricity provides a promising solution. However, faradaic efficiency of common electro-catalysts is low, and therefore, the design of highly selective, energy-efficient, and cost-effective electrocatalysts is critical. Carbon-based materials present some advantages such as relatively low cost and renewability, excellent electrical conductivity, and tunable textural and chemical surface, which show them as competitive materials for the electro-reduction of CO2.

Microchromosome Organization in Birds
Interchromosomal rearrangements involving microchromosomes are rare events in birds. To date, they have been found mostly in Neognathae and Neoaves (e.g., Psittaciformes, Falconiformes, and Cuculiformes), although only a few orders have been analyzed. Hence, cytogenomic studies focusing on microchromosomes in species belonging to different bird orders are essential to shed more light on the avian chromosome and karyotype evolution. Relevant hypothetical Neognathae, Neoaves and other ancestral karyotypes can be reconstructed to trace these rearrangements. In a more recent study, a comparative chromosome mapping for chicken microchromosomes 10 to 28 was performed using interspecies BAC-based FISH hybridization in five species, representing four Neoaves orders (Caprimulgiformes, Piciformes, Suliformes, and Trogoniformes). These results suggest that the ancestral microchromosomal syntenies are conserved in Pteroglossus inscriptus (Piciformes), Ramphastos tucanus tucanus (Piciformes), and Trogon surrucura surrucura (Trogoniformes). On the other hand, chromosome reorganization in Phalacrocorax brasilianus (Suliformes) and Hydropsalis torquata (Caprimulgiformes) included fusions involving both macro- and microchromosomes. Fissions in macrochromosomes were observed in P. brasilianus and H. torquata. No interchromosomal rearrangement involving microchromosomes were found to be shared between avian orders where rearrangements were detected. These findings suggest that convergent evolution involving microchromosomal change is a rare event in birds and may be appropriate in cytotaxonomic inferences in orders where these rearrangements occurred.

Entropy-Enthalpy Compensations Fold Proteins
 we reveal a protein-folding mechanism based on the entropy-enthalpy compensations that initially driven by laterally hydrophobic collapse among the side-chains of adjacent residues in the sequences of unfolded protein chains. This hydrophobic collapse promotes the formation of the H-bonds within the polypeptide backbone structures through the entropy-enthalpy compensation mechanism, enabling secondary structures and tertiary structures to fold reproducibly following explicit physical folding codes and forces. The temperature dependence of protein folding is thus attributed to the environment dependence of the conformational Gibbs free energy equation. The folding codes and forces in the amino acid sequence that dictate the formation of β-strands and α-helices can be deciphered with great accuracy through evaluation of the hydrophobic interactions among neighboring side-chains of an unfolded polypeptide from a β-strand-like thermodynamic metastable state. The folding of protein quaternary structures is found to be guided by the entropy-enthalpy compensations in between the docking sites of protein subunits according to the Gibbs free energy equation that is verified by bioinformatics analyses of a dozen structures of dimers. Protein folding is therefore guided by multistage entropy-enthalpy compensations of the system of polypeptide chains and water molecules under the solution conditions.

Low-functioning autism (LFA) is autism with low functioning levels. Symptoms may include impaired social communications or interactions, bizarre behavior, and lack of social or emotional reciprocity. Sleep problems, aggressiveness, and self-injurious behavior are also possible consequences. LFA is not a recognized diagnosis in the DSM-5 or ICD-10, neither of which subdivides autism based on intellectual capabilities. Synonyms include Kanner's syndrome, Kannerian autism and classic autism. Salmonella enterica serovars are important pathogens of humans and animals that are responsible for enormous morbidity, mortality and economic loss worldwide.  Models used to study the disease pathology so far have provided valuable advancements, however, the molecular complexity of its pathogenesis remains poorly understood, particularly in humans. Therefore there remains a disconnect between what works at the bench versus at the bedside, especially in case of vaccines. The development of organoids/enteroids offers a tremendous opportunity to bridge this gap by bringing human-specific factors into the research models as well as elevate our understanding of the interactions and crosstalk between multiple cell types and the microbiota with Salmonella. Thus the use of organoids in studying Salmonella biology has the potential for improving clinical outcomes and future prophylactic and therapeutic intervention strategies.

Upcycling of Brewers' Spent Grains
Brewers' spent grains (BSGs) are the most important by-product of the brewing industry and are rich in protein and fiber. However, abundant amounts of BSGs are discarded annually worldwide. This project aimed to employ and compare innovative drying techniques to introduce snacks with protein sources derived from leftover BSGs. This study explored the dehydration kinetics of BSGs and the effect of three different drying methods—oven drying (OD), freeze drying (FD), and vacuum microwave drying (VMD)—on their protein content and functionality. Then, an energy and exergy analysis for the drying methods was given. Accordingly, a snack product (baked chips) using the dehydrated BSGs was developed by a sensory panel study to assess consumer acceptability of the final products. It was found that the VMD process took less drying time (48 min) compared to OD (50 min), with higher effectiveness as a drying process. VMD-treated BSG also showed moderate protein functionality and the highest overall acceptability when used in baked chips. Thus, VMD might be used as a sustainable drying technology for thermal treatment and valorization of BSG. In addition to having implications for dietary health, findings can help improve the economy of the breweries and other industries that deal with the processing of grains by valorizing their process waste and contributing to sustainability.

Acute Respiratory Distress Syndrome
The pulmonary endothelium is a metabolically active continuous monolayer of squamous endothelial cells that internally lines blood vessels and mediates key processes involved in lung homoeostasis. Many of these processes are disrupted in acute respiratory distress syndrome (ARDS), which is marked among others by diffuse endothelial injury, intense activation of the coagulation system and increased capillary permeability. Most commonly occurring in the setting of sepsis, ARDS is a devastating illness, associated with increased morbidity and mortality and no effective pharmacological treatment. Endothelial cell damage has an important role in the pathogenesis of ARDS and several biomarkers of endothelial damage have been tested in determining prognosis. By further understanding the endothelial pathobiology, development of endothelial-specific therapeutics might arise. In this review, we will discuss the underlying pathology of endothelial dysfunction leading to ARDS and emerging therapies. Furthermore, we will present a brief overview demonstrating that endotheliopathy is an important feature of hospitalised patients with coronavirus disease-19 (COVID-19).
