Monitoring of lactate is spreading from the evident clinical environment, where its role as a biomarker is notorious, to the agrifood ambit as well. In the former, lactate concentration can serve as a useful indicator of several diseases (e.g., tumour development and lactic acidosis) and a relevant value in sports performance for athletes, among others. In the latter, the spotlight is placed on the food control, bringing to the table meaningful information such as decaying product detection and stress monitoring of species. No matter what purpose is involved, electrochemical (bio)sensors stand as a solid and suitable choice.

Glial Cells in Ischemia-Reperfusion Injury
Ischemic stroke is the second cause of mortality and the first cause of long-term disability constituting a serious socioeconomic burden worldwide. Approved treatments include thrombectomy and rtPA intravenous administration, which, despite their efficacy in some cases, are not suitable for a great proportion of patients. Glial cell-related therapies are progressively overcoming inefficient neuron-centered approaches in the preclinical phase. Exploiting the ability of microglia to naturally switch between detrimental and protective phenotypes represents a promising therapeutic treatment, in a similar way to what happens with astrocytes. However, the duality present in many of the roles of these cells upon ischemia poses a notorious difficulty in disentangling the precise pathways to target. Still, promoting M2/A2 microglia/astrocyte protective phenotypes and inhibiting M1/A1 neurotoxic profiles is globally rendering promising results in different in vivo models of stroke.

The Concept of Postbiotics
In 2021, the International Scientific Association for Probiotics and Prebiotics (ISAPP) defined a postbiotic as “a preparation of inanimate microorganisms and/or their components that confers a health benefit on the host”. This definition of postbiotic requires that the whole or components of inactivated microbes be present, with or without metabolic end products. The definition proposed by ISAPP is comprehensive enough to allow the development of postbiotics from different microorganisms, to be applied in different body sites, encouraging innovation in a promising area for any regulatory category and for companion or production animals, and plant or human health. From a technological perspective, probiotic products may contain inanimate microorganisms, which have the potential to impart a health benefit. However, their contribution to health in most cases has not been established, even if at least one probiotic has been shown to confer the same health benefit by live or inanimate cells.

Pathophysiology of Fibromyalgia
Fibromyalgia syndrome (FMS) is one of the most prevalent disorders that affects the muscles and is characterized by pain, stiffness, and soreness in the muscles, tendons, and joints. Fibromyalgia is in a family of disorders termed the affective spectrum disorders (ASD). ASDs frequently co-occur in both individuals and families and share physiologic abnormalities along with genetic risk factors that may be central to their etiology. The most prevalent ASDs are attention-deficit/hyperactivity disorder, major depressive disorder [MDD], generalized anxiety disorder, obsessive compulsive disorder, bulimia nervosa, panic disorder, posttraumatic stress disorder, premenstrual dysphoric disorder, social phobia, and medical disorders such as irritable bowel syndrome [IBS], migraine, and cataplexy. FMS commonly manifests in young or middle-aged females as chronic widespread pain, stiffness, fatigue, disrupted unrefreshing sleep, and cognitive difficulties. FMS often coexists with a number of other unexplained symptoms, anxiety and/or depression, and functional impairment of daily living activities. Fibromyalgia typically causes broad pain that affects both sides of the body with numerous “tender points”. Despite having incapacitating physical pain, FMS is not accompanied by tissue inflammation, tissue damage, or deformity.

The Ketogenic Diet and Cardiovascular Diseases
The ketogenic diet has been shown to have a multifaceted effect on the prevention and treatment of cardiovascular diseases (CVD). Among other aspects, it has a beneficial effect on the blood lipid profile, even compared to other diets. It shows strong anti-inflammatory and cardioprotective potential, which is due, among other factors, to the anti-inflammatory properties of the state of ketosis, the elimination of simple sugars, the restriction of total carbohydrates and the supply of omega-3 fatty acids. In addition, ketone bodies provide “rescue fuel” for the diseased heart by affecting its metabolism. They also have a beneficial effect on the function of the vascular endothelium, including improving its function and inhibiting premature ageing. The ketogenic diet has a beneficial effect on blood pressure and other CVD risk factors through, among other aspects, weight loss. The evidence cited is often superior to that for standard diets, making it likely that the ketogenic diet shows advantages over other dietary models in the prevention and treatment of cardiovascular diseases.
