Fungal Control Through the Hygiene Process
Contamination caused by fungi stands out as a significant microbiological issue in the food industry, particularly leading to premature spoilage across various food segments, including the dry-fermented meat industry. The emergence of undesired fungi on product surfaces results in substantial economic losses. Once microorganisms infiltrate the food, contamination ensues, and their subsequent proliferation can adversely impact the product’s appearance, odor, flavor, and texture. This, in turn, leads to consumer rejection and negatively affects the commercial brand. Additionally, concerns persist regarding the potential presence of mycotoxins in these products. Given the detrimental effects of spoilage fungi in the food industry, practices such as thorough cleaning and sanitization become crucial to prevent contamination and subsequent premature deterioration. These measures play a pivotal role in ensuring the quality and safety of food, while also extending the shelf life of products.

Logic Gates and Molecular Logic Gates
Logic gates are devices used to perform binary arithmetic and logical operations and thus constitute the basis of modern computers. They perform Boolean logic operations on one or more inputs to produce an output. Molecular switches convert input stimulations into output signals. Therefore, the principles of binary logic can be applied to the signal transduction operated by molecular switches. The presence of various ions, neutral species, pH, temperature, and viscosity, among many others, result in color or emission changes due to the complex interplay of many excited state processes and environmental parameters. In this entry, basic logic gates are defined, and their types are given, while examples of molecular logic gates are also presented.

Oxidative Stress and Bio-Regulation
Reactive oxygen species (ROS) and free radicals work to maintain homeostasis in the body, but their excessive production causes damage to the organism. The human body is composed of a variety of cells totaling over 60 trillion cells. Each cell performs different functions and has a unique lifespan. The lifespan of cells is preprogrammed in their genes, and the death of cells that have reached the end of their lifespan is called apoptosis. This is contrary to necrosis, which is the premature death of cells brought about by physical or scientific forces. Each species has its own unique lifespan, which in humans is estimated to be up to 120 years. Elucidating the mechanism of the death of a single cell will lead to a better understanding of human death, and, conversely, the death of a single cell will lead to exploring the mechanisms of life. In this sense, research on active oxygen and free radicals, which are implicated in biological disorders and homeostasis, requires an understanding of both the physicochemical as well as the biochemical aspects. Based on the discussion above, it is clear to see that active oxygen and free radicals have dual functions of both injuring and facilitating homeostasis in living organisms.

Climate Change Challenges in Temperate and Sub-Tropical Fruit Tree Cultivation
In the last few years, the world has experienced the impacts of climate change, such as elevated mean annual temperature, extreme weather events, drought, etc. Among living organisms, perennial plant species are the ones mostly exposed to climate change impacts, as they may experience different extreme events within the same year, such as flooding during some periods and drought in summer months, extremely low temperatures in winter but excessively high temperatures in summer, etc. Climate change affects a range of physiological functions of temperate fruit and nut tree species, such as their phenophases, bud dormancy release and vernalization, pollination and fruit set, fruit growth and quality, as well as bud sprouting and growth initiation. Besides these, the impact of climate change on pests, diseases, and weeds may generate significant negative interactions with tree physiology, threatening food production, food safety, and human welfare. In the present manuscript, a general aspect of climate change impacts on fruits’ and nut trees’ physiological functions is described and commented on.
