Nuts are indehiscent dry fruits with one seed and a thick, hard pericarp. The presence of nuts in diets has notably increased due to their composition, and the presence of antioxidants and their unsaturated fatty acid profile has led to a considerable increase in their consumption. The volatile profile of nuts is important from different points of view. It affects consumer’s selection, influences raw material selection for the production of composite foods, dictates variety selection in breeding programs, and, from a quality perspective, its changes can indicate food degradation or alteration.

Volatile Organic Compounds Evolution
Volatile organic compounds (VOCs) are emitted by plants as a consequence of biotic and abiotic interaction which often change rapidly over time. Epigenetic factors, such as DNA methylation and histone modification, might trigger adaptive responses to these evolutionary pressures regulating both genes and transcription factors, as well as the rhythmic emission of VOCs through circadian clock regulation. In addition, transgenerational epigenetic effects and polyploidy could modify the generation of VOCs’ profiles of offspring, contributing to long-term evolutionary shifts.

Off-notes contribute to negative perceptions of pulses (beany notes). Volatile compounds belong to a large variety of chemical classes. They are mainly produced from the oxidation of unsaturated free fatty acids and the degradation of amino acids during seed development, storage, and transformation (dehulling, milling, and starch or protein production).

max Changes of Masters Athletes in Continuing Training
Elite masters endurance athletes are considered models of optimal healthy aging due to the maintenance of high cardiorespiratory fitness (CRF) until old age. Whereas a drop in VO2max in masters athletes has been broadly investigated, the modifying impact of training still remains a matter of debate. Longitudinal observations in masters endurance athletes demonstrated VO2max declines between −5% and −46% per decade that were closely related to changes in training volume.
