General Characteristics of Chitosan
Chitosan is a naturally occurring compound that can be obtained from deacetylated chitin, which is obtained from various sources such as fungi, crustaceans, and insects. Commercially, chitosan is produced from crustaceans. Based on the range of its molecular weight, chitosan can be classified into three different types, namely, high molecular weight chitosan (HMWC, >700 kDa), medium molecular weight chitosan (MMWC, 150–700 kDa), and low molecular weight chitosan (LMWC, less than 150 kDa).

The common types of protein–polysaccharide complex/conjugate-based bioactive ingredient delivery systems include emulsion (conventional emulsion, nanoemulsion, multiple emulsion, multilayered emulsion, and Pickering emulsion), microcapsule, hydrogel, and nanoparticle-based delivery systems. This entry highlights the applications of protein–polysaccharide-based delivery vehicles in common bioactive ingredients including polyphenols, food proteins, bioactive peptides, carotenoids, vitamins, and minerals. The loaded food bioactive ingredients exhibited enhanced physicochemical stability, bioaccessibility, and sustained release in simulated gastrointestinal digestion.

Molecular Classification of Breast Cancer
Breast cancer is the most commonly occurring cancer in women. There were over two-million new cases in world in 2018. It is the second leading cause of death from cancer in western countries. At the molecular level, breast cancer is a heterogeneous disease, which is characterized by high genomic instability evidenced by somatic gene mutations, copy number alterations, and chromosome structural rearrangements. The genomic instability is caused by defects in DNA damage repair, transcription, DNA replication, telomere maintenance and mitotic chromosome segregation. According to molecular features, breast cancers are subdivided in subtypes, according to activation of hormone receptors (estrogen receptor and progesterone receptor), of human epidermal growth factors receptor 2 (HER2), and or BRCA mutations.

The concept of Glycemic Index (GI) was suggested by Jenkins to classify carbohydrate-containing foods. GI is “an expression of the percentage of the area under the blood glucose response curve when taking the same amount of carbohydrate as glucose”. It is a physiological way to explain how dietary carbohydrate impacts blood glucose. The GI value has a range between 1 and 100. Glucose, as the reference material, has a GI value of 100. A food with a lower GI value (≤54) raises blood glucose more slowly.

Idiopathic Pulmonary Fibrosis
Idiopathic pulmonary fibrosis (IPF) is a chronic, progressive interstitial lung disease. Chronic lung inflammation is linked to the pathogenesis of IPF. DROSHA, a class 2 ribonuclease III enzyme, has an important role in the biogenesis of microRNA (miRNA). The function of miRNAs has been identified in the regulation of the target gene or protein related to inflammatory responses via degradation of mRNA or inhibition of translation. The absent-in-melanoma-2 (AIM2) inflammasome is critical for inflammatory responses against cytosolic double stranded DNA (dsDNA) from pathogen-associated molecular patterns (PAMPs) and self-DNA from danger-associated molecular patterns (DAMPs). The AIM2 inflammasome senses double strand DNA (dsDNA) and interacts with the adaptor apoptosis-associated speck-like protein containing a caspase recruitment domain (ASC), which recruits pro-caspase-1 and regulates the maturation and secretion of interleukin (IL)-1β and IL-18. A recent study showed that inflammasome activation contributes to lung inflammation and fibrogenesis during IPF. In the current review, we discuss recent advances in our understanding of the DROSHA–miRNA–AIM2 inflammasome axis in the pathogenesis of IPF.

Cellulosic Ethanol Commercialization
Cellulosic ethanol commercialization is the process of building an industry out of methods of turning cellulose-containing organic matter into cellulosic ethanol for use as a biofuel. Companies, such as Iogen, POET, DuPont, and Abengoa, are building refineries that can process biomass and turn it into bioethanol. Companies, such as Diversa, Novozymes, and Dyadic, are producing enzymes that could enable a cellulosic ethanol future. The shift from food crop feedstocks to waste residues and native grasses offers significant opportunities for a range of players, from farmers to biotechnology firms, and from project developers to investors. As of 2013, the first commercial-scale plants to produce cellulosic biofuels have begun operating. Multiple pathways for the conversion of different biofuel feedstocks are being used. In the next few years, the cost data of these technologies operating at commercial scale, and their relative performance, will become available. Lessons learnt will lower the costs of the industrial processes involved.

Pedestrian Violations
Pedestrians are a vulnerable group of road users. Worldwide, the number of pedestrian deaths annually in road traffic accidents is about 270,000, which exceeds 22% of all traffic mortalities. This rate reveals its critical role in traffic safety research. Of these, pedestrian accidents mainly occur at signalized intersections when pedestrians illegally pass-through crosswalks, which are highly dangerous due to the high risk of pedestrian–vehicle interactions. Illegal crossings mainly include pedestrians crossing at red lights or outside of marked crosswalks, and the former usually causes severe harm. This risky behavior may raise traffic safety issues between pedestrians and driving vehicles. As such, it is necessary to analyze pedestrian red-light violations at signalized intersections and to reduce the risk of pedestrian crossing violations.
