In vitro and in vivo studies have demonstrated the bioactivity of rutin, a dietary flavonol naturally found in several plant species. Despite widespread knowledge of its numerous health benefits, such as anti-inflammatory, antidiabetic, hepatoprotective and cardiovascular effects, industrial use of rutin is still limited due to its low solubility in aqueous media, the characteristic bitter and astringent taste of phenolic compounds and its susceptibility to degradation during processing. To expand its applications and preserve its biological activity, novel encapsulation systems have been developed.

Mechanism of Diffusion Bonding
Critical aspects of innovative design in engineering disciplines like infrastructure, transportation, and medical applications require the joining of dissimilar materials. Welding and brazing, while widely used, may pose challenges when joining materials with large differences in melting temperature and can lead to mechanical property degradation. In contrast, diffusion bonding offers a lower temperature process that relies on solid-state interactions to develop bond strength. The joining of tungsten and steel, especially for fusion reactors, presents a unique challenge due to the significant disparity in melting temperatures and the propensity to form brittle intermetallics. Here, diffusion characteristics of tungsten–steel interfaces are examined and the influence of bonding parameters on mechanical properties are investigated. Additionally, CALPHAD modeling is employed to explore joining parameters, thermal stability, and diffusion kinetics. The insights from this research can be extended to join numerous dissimilar materials for specific applications such as aerospace, automobile industry, power plants, etc., enabling advanced and robust design with high efficiency.

Rheological Behavior of Cement Paste
The rheological behavior of cement paste displays several complexities such as non-linearity, yielding, time-dependence and chemical changes. The most common testing procedures allowing for the characterization of this behavior have been reported. For flow behavior, the most relevant protocol consists of the application of a ramp sweep (shear rate or shear stress) so that the flow curve (shear stress as a function of the shear rate) is at steady state flow. The structural build-up can be characterized by static yield stress measurements or the SAOS protocol for various resting times. The non-linearity of flow behavior corresponds to a shear-thinning/shear-thickening phenomenon that can be represented by the Herschel–Bulkley model. If the shear-thinning phenomenon can be related to the flocculation state, the origins of shear thickening are not clearly elucidated. Theories based on order–disorder transition, particle clustering, or viscous/inertial regime transition have been developed to explain the appearance of shear thickening.

Applications of Transglutaminase
Stabilization and reusability of enzyme transglutaminase (TGM) are important goals for the enzymatic process since immobilizing TGM plays an important role in different technologies and industries. TGM can be used in many applications. Enzyme TGM gained much attention due mainly to its potential for industrial applications. In their earlier uses, TGMs focused mostly on the cheesemaking processes, mainly improving the characteristics of the cheese itself. Later on, beverage properties were being improved by decreasing viscosity and solubility increases, as well as reduction in yoghurt syneresis. Therefore, the majority of investigations of applying TGMs in different processes focused mostly on improving the functional properties of proteins that can be utilized to develop improved food ingredients, such as crosslinked milk powders and high-added food products. Such improvements were also possible due to the different immobilization techniques of TGM.

Near-Infrared-II Fluorophores for Spectra-Domain Multichannel Biosensing
The pathological process involves a range of intrinsic biochemical markers. The detection of multiple biological parameters is imperative for providing precise diagnostic information on diseases. In vivo multichannel fluorescence biosensing facilitates the acquisition of biochemical information at different levels, such as tissue, cellular, and molecular, with rapid feedback, high sensitivity, and high spatiotemporal resolution. The implementation of in vivo multichannel fluorescence biosensing requires a meticulous selection of nonoverlap excitation–emission wavelengths for the use of NIR-II fluorophores. To achieve simultaneous visualization/tracking of multiple analytes at the tissue or cellular level, fluorophores with varying excitation–emission properties are necessary to bind specific targets.
