D-sorbitol is transformed into L-sorbose by Gluconobacter oxydans in the first step of fermentation; then, L-sorbose is transformed into 2-keto-L-gulonic acid (2-KGA) by a coculture system composed of Ketogulonicigenium vulgare and associated bacteria; and finally, 2-KGA is transformed into vitamin C through chemical transformation.

Rice is an important staple food crop for more than half of the world’s population and substantial quantities of rice bran emerge as the main by-product of rice grain milling. Usually, rice bran is used as animal feed or discarded as waste. Although it is highly nutritious and comprises many bioactive compounds with considerable health benefits, the rapid deterioration of bran limits the exploitation of the full potential of rice bran. Hydrolytic rancidity is the main obstacle to using rice bran as food, and the enzyme inactivation process, which is termed stabilization, is the only way to prevent it.

Development of SARS-CoV-2 Variants
A novel coronavirus (SARS-CoV-2) emerged towards the end of 2019 that caused a severe respiratory disease in humans called COVID-19. It led to a pandemic with a high rate of morbidity and mortality that is ongoing and threatening humankind. Most of the mutations occurring in SARS-CoV-2 are synonymous or deleterious, but a few of them produce improved viral functions. The first known mutation associated with higher transmissibility, D614G, was detected in early 2020. Since then, the virus has evolved; new mutations have occurred, and many variants have been described. Depending on the genes affected and the location of the mutations, they could provide altered infectivity, transmissibility, or immune escape. To date, mutations that cause variations in the SARS-CoV-2 spike protein have been among the most studied because of the protein’s role in the initial virus–cell contact and because it is the most variable region in the virus genome. Some concerning mutations associated with an impact on viral fitness have been described in the Spike protein, such as D614G, N501Y, E484K, K417N/T, L452R, and P681R, among others. To understand the impact of the infectivity and antigenicity of the virus, the mutation landscape of SARS-CoV-2 has been under constant global scrutiny. The virus variants are defined according to their origin, their genetic profile (some characteristic mutations prevalent in the lineage), and the severity of the disease they produce, which determines the level of concern. If they increase fitness, new variants can outcompete others in the population. The Alpha variant was more transmissible than previous versions and quickly spread globally. The Beta and Gamma variants accumulated mutations that partially escape the immune defenses and affect the effectiveness of vaccines. Nowadays, the Delta variant, identified around March 2021, has spread and displaced the other variants, becoming the most concerning of all lineages that have emerged. The Delta variant has a particular genetic profile, bearing unique mutations, such as T478K in the spike protein and M203R in the nucleocapsid. This entry summarizes the current knowledge of the different mutations that have appeared in SARS-CoV-2, mainly on the spike protein. It analyzes their impact on the protein function and, subsequently, on the level of concern of different variants and their importance in the ongoing pandemic.

Several types of cells, such as vascular (endothelial cell), vascular-associated (smooth muscle cell and fibroblast) and inflammatory cells, are involved in plaque formation, plaque rupture and thrombus formation, which result in atherosclerosis. Gangliosides, a group of glycosphingolipids, are expressed on the surface of vascular, vascular-associated and inflammatory cells, where they play functional roles. Here we introduce gangliosides expressed on those cells and their relevance to vascular diseases.

Protofibrils in Alzheimer’s Disease
Worldwide, Alzheimer's disease (AD) is the most common age-related neurodegenerative disease and is characterized by unique pathological hallmarks in the brain, including plaques composed of amyloid β-protein (Aβ) and neurofibrillary tangles of tau protein. Genetic studies, biochemical data, and animal models have suggested that Aβ is responsible for the pathogenesis of AD (i.e., the amyloid hypothesis). Indeed, Aβ molecules tend to aggregate, forming oligomers, protofibrils, and mature fibrils. However, while these Aβ species form amyloid plaques of the type implicated in AD neurodegeneration, recent clinical trials designed to reduce the production of Aβ and/or the plaque burden have not demonstrated clinical efficacy. In addition, recent studies using synthetic Aβ peptides, cell culture models, Arctic transgenic mice, and human samples of AD brain tissues have suggested that the pre-fibrillar forms of Aβ, particularly Aβ protofibrils, may be the most critical species, compared with extracellular fibrillar forms. We recently reported that protofibrils of Aβ1-42 disturbed membrane integrity by inducing reactive oxygen species generation and lipid peroxidation, resulting in decreased membrane fluidity, intracellular calcium dysregulation, depolarization, and synaptic toxicity. Therefore, the therapeutic reduction of protofibrils may prevent the progression of AD by ameliorating neuronal damage and cognitive dysfunction through multiple mechanisms.

Application of Campylobacter jejuni Phages
Campylobacter jejuni is a zoonotic bacterial pathogen found in abundance, e.g., in raw poultry. C. jejuni is part of the avian gut microbiome, causing no harm to birds. When birds are slaughtered, the bacterium is released from the intestines and contaminates the meat. Cross-contaminated foods processed in parallel to the meat cause diarrhea in humans and in rare cases may cause post-infectious complications like arthritis and paralysis of peripheral nerves. Illnesses caused by C. jejuni have been on the rise in both developed and developing countries. At the same time, C. jejuni has acquired resistance to important antibiotics, which further complicates therapeutic approaches. To decrease the Campylobacter load on chicken carcasses, chemical or thermal treatment can be used. However, this may change the taste or affect the appearance of chicken meat.

England School Census
The School Census is a statutory data collection for all maintained (state-funded) schools in England . This includes nursery, primary, secondary, middle-deemed primary, middle-deemed secondary, local authority maintained special and non-maintained special schools, academies including free schools, studio schools and university technical colleges and city technology colleges. Service children's education schools also participate on a voluntary basis. Schools that are entirely privately funded are not included. It is a statutory obligation for schools to complete the census and schools must ask parents for information, tell parents and pupils where data are optional, and tell them what it will be used for before submitting it to Local Authorities or Department for Education. There is no obligation for parents or children to provide all of the data. The census dataset contains approximately eight million records per year and includes variables on the pupil's personal data, including name, home postcode, gender, age, ethnicity, special educational needs, free school meals eligibility, as well as educational history and attainment results. The census also sends sensitive data to the Department for Education, such as absence, exclusions and their reasons, indicators of armed forces or linked to indicators of children in care. The data collected on children from age 2-19, three times a year, creates a "lifetime school record" of characteristics, testing and tracking, to form a single longitudinal record over time. This single central view of a child's personal confidential data and their educational achievement, behaviours and personal characteristics, is core to the National Pupil Database, a linked database controlled by the Department for Education. The data collected for each individual pupil is listed in the National Pupil Database User Guide. Data is retained indefinitely and in December 2015, the National Pupil Database contained 19,807,973 individual pupil records on a named basis. It is "one of the richest education datasets in the world" according to the National Pupil Database (NPD) User Guide. Controversy surrounds the school census expansion in 2016 to collect nationality data, first reported on in June, 2016, in Schools Week.
