COVID-19 in the Construction Sector
This section analyzes the influence of COVID-19 in the construction sector. Construction workers’ high vulnerability to the spread of the virus motivated this entry. The construction sector’s peculiarities and some work procedure characteristics in this sector make telecommuting impossible in most activities. In addition, most of the states and national governments declared the construction sector essential activity due to its high economic impact. The working conditions in this sector are very special: constant trips to work in groups, work group execution with little interpersonal distance, group travel, stays and accommodations away from home, meals in restaurants or work canteens, lunch in restaurants or work canteens, etc. Due to all of this, the contagion rate was very high during the pandemic months. Even today, it is still considered one of the most dangerous sectors for these purposes. With all this in mind, here we discuss why it is difficult to minimize the spread of the virus for construction workers, summarize how to assess exposure risk grades for construction job tasks, and provide possible protection requirements for the different exposure risk grades.

Stride Length
Stride length was defined as the distance measured parallel to the line of progression, including two consecutive steps. Stride width was defined as side-to side distance between the heel of the current foot and heel of the next opposite foot. On the other hand, step width was determined as the distance between the outermost borders of two consecutive footprints. The standard deviation of the three variables (stride length) was used to represent the variability of the stride length.

Food Security Interventions among Refugees
There are 26 million refugees globally, with as many as 80% facing food insecurity irrespective of location. Humanitarian agencies continually provide assistance and evaluate their interventions in areas of refugee crisis. Researchers should adopt a standard feasible food security assessment tool which is needed to assess the effectiveness of interventions across locations and countries to develop best practices based on comparative results.

Sprouts and Microgreens for Healthy Diets
Healthy diets prevent diet-related non-communicable diseases; they provide nutrients and health-promoting substances from nutritious foods in adequate amounts. With society's growing interest in healthy eating, the interest in fresh, ready-to-eat, functional food, such as microscale vegetables (sprouted seeds and microgreens), has been on the rise in recent years globally. This entry briefly describes the crops commonly used for microscale vegetable production, highlights Brassica vegetables because of their health-promoting secondary metabolites and looks at consumer acceptance of sprouts and microgreens. Landraces, wild food plants, and crops' wild relatives often have high phytonutrient density and exciting flavours and tastes, thus providing scope to widen the range of crops and species used for this purpose. Moreover, the nutritional value and content of phytochemicals often vary with plant growth and development stages of the same crop. Sprouted seeds and microgreens are often more nutrient-dense than ungerminated seeds or mature vegetables. This entry also describes the environmental and priming factors that may impact the nutritional value and content of phytochemicals of microscale vegetables. Due to their short growth cycle, nutrient-dense sprouts and microgreens can be produced with minimal input and without pesticides. They can even be home-grown and harvested as needed, hence having low environmental impacts and a broad acceptance among health-conscious consumers.
